Its been a while since my first post in this group, maybe 2 to 3 years ago. But I haven't stop making pickups and I have developed my own workflow and heavily experimenting.
Right now, I'm just building P90s for the different amps I have, attempting to harmonize them cohesively with one another.
My latest design is the 4 pole minihumbucker sized P90, I call them the J70. Video coming out in a couple of days stay tuned. All out of wood...

Bluegrass and Delta blues are acoustic. Just miking an acoustic guitar with a Shure SM-57 microphone should do it. Another option is to use a piezo pickup with a buffer to match the impedance between the piezo and the amplifier. Two piezos wired in series can approximate a battery powered buffer.
Is there a type of pickup that would give the old sound that the old bluegrass and delta blues have I’d like to reproduce that sound if it’s possible

Yes, there is more of an "airier" sound to a hollow body. The reason is the vibration of the hollow body also affects the vibration of the strings. That being said, the more you crank up the pickup with distortion, the more that gets obscured.
A general pick up question: As far as I understand, electro magnetic pick-ups only pick up the vibration of the strings.
They use electro magnetic pick-ups on hollow body guitars. So does the fact that it's hollow body make any difference to the sound in any way?
In my experience, it works, but the signal isn't very loud. You might be able to beef things up by using a stronger magnet, like a neodymium magnet.
Well, there is a relationship between wire gauge, number of winds and amplitude of signal generated.
In general, the heavier gauge wire would generate less amplitude in the signal output. That doesn't mean don't try it, interesting, and I'd like to know what you find.
But generally, the finer gauge wire might be found in solenoids and such if you are driven to scavenge.
But FWIW, a fresh pristine roll can be acquired at reasonable expense.
